  • 4 medium medium ripe tomatoes, diced Ripe tomatoes = juicier flavor.
  • 1 sleeve buttery crackers, crushed Use buttery crackers for richness.
  • ½ cup mayonnaise Adjust mayo if you want it saucier.
  • ½ cup shredded cheddar cheese Mild cheddar = crowd-pleasing melt.
  • 2 stalks green onions, sliced Green onions = fresh bite.
  • Salt and black pepper, to taste

Method
 

Preparation
  1. Dice the tomatoes into roughly 1/2-inch pieces and place them in a large mixing bowl.
  2. Open the cracker sleeve and crush the crackers in the bag to medium crumbs; add them to the bowl.
  3. Scoop in the mayonnaise and sprinkle the shredded cheddar over the top.
  4. Slice the green onions thin and toss them in for a bright oniony note.
  5. Gently mix with a large spoon until everything is evenly coated and the crackers pick up some moisture; they should be soft but still offer little crunch.
  6. Taste, then season with salt and a few turns of black pepper.
  7. Serve immediately so the crackers keep a pleasant texture and you get that buttery crunch against juicy tomato.

Notes

Time-saver: Use pre-shredded cheese to cut prep in half. If tomatoes get too watery, drain a bit of juice before mixing to avoid soggy crackers. Stir in a pinch of smoked paprika for warmth and depth.
