  • 2 tablespoons Extra virgin olive oil For sautéing
  • 1 small onion, finely chopped Adds sweetness
  • 3 cloves fresh garlic, minced For aroma
  • 2 cans crushed tomatoes San Marzano recommended
Seasoning Ingredients
  • 1 tablespoon sugar To balance acidity
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste red pepper flakes For heat, optional
  • to taste salt and pepper For seasoning

Method
 

Preparation
  1. Heat the olive oil in a medium saucepan over medium heat until shimmering.
  2. Add the finely chopped onion and sauté until translucent, about 5 minutes, stirring occasionally.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
Cooking
  1. Pour in the crushed tomatoes, sugar, oregano, basil, red pepper flakes, salt, and pepper.
  2. Bring the sauce to a gentle simmer and let it cook for 20-30 minutes, stirring occasionally, until it thickens to your liking.
  3. Adjust the seasoning to taste before using the sauce on your favorite pizza.

Notes

Store in an airtight container for up to 5 days in the fridge, or freeze for up to 3 months. Thaw overnight in the fridge before using. Avoid reheating in the microwave as it can alter the texture.
