Preparation
- In a mixing bowl, add 1 cup of boiling water to the Jell-O mix and stir until fully dissolved. Place in the fridge to thicken.
- Combine melted butter with 3/4 of the crushed graham crackers, mixing until crumbly. Press this mixture into the bottom of a 9x13 baking dish for a solid crust.
- In another bowl, combine the evaporated milk (or heavy cream) and beat with a handheld mixer until fluffy.
- In a different bowl, mix cream cheese, lemon juice, and sugar until fully combined. Add the chilled Jell-O mix and carefully fold in the whipped mixture.
Assembly
- Pour the creamy filling over your graham cracker crust, leveling it out. Garnish with the remaining crumbs.
- Let the cheesecake sit in the fridge for at least 2 hours to set and enhance the flavors.
Notes
Allow cheesecake to chill properly for the best flavor and texture. Can be made a day in advance.
