Ingredients
  

For the crust
  • 3/4 cup Crushed graham crackers Use the right amount for a perfect crumbly crust.
  • 1/2 cup Unsalted butter, melted Adds richness to the crust.
For the filling
  • 1 cup Evaporated milk or heavy whipping cream Both options work well; heavy cream is preferred for richness.
  • 2 packages Cream cheese Must be at room temperature for easy mixing.
  • 1 packet Instant lemon Jell-O mix Provides a burst of citrus flavor.
  • 1 cup Sugar Sweetens the filling.
  • 2 tablespoons Lemon juice Enhances the lemon flavor.

Method
 

Preparation
  1. In a mixing bowl, add 1 cup of boiling water to the Jell-O mix and stir until fully dissolved. Place in the fridge to thicken.
  2. Combine melted butter with 3/4 of the crushed graham crackers, mixing until crumbly. Press this mixture into the bottom of a 9x13 baking dish for a solid crust.
  3. In another bowl, combine the evaporated milk (or heavy cream) and beat with a handheld mixer until fluffy.
  4. In a different bowl, mix cream cheese, lemon juice, and sugar until fully combined. Add the chilled Jell-O mix and carefully fold in the whipped mixture.
Assembly
  1. Pour the creamy filling over your graham cracker crust, leveling it out. Garnish with the remaining crumbs.
  2. Let the cheesecake sit in the fridge for at least 2 hours to set and enhance the flavors.

Notes

Allow cheesecake to chill properly for the best flavor and texture. Can be made a day in advance.
