Preparation
- In a bowl, add 1 cup of boiling water to the lemon Jell-O mix and stir until fully dissolved. Place it in the fridge to thicken, which will take about 15 minutes.
- Combine melted butter with three-quarters of the crushed graham crackers in a large bowl until crumbly. Press this mixture into the bottom of a 9x13 baking dish for a firm crust.
- In another bowl, beat evaporated milk with a handheld mixer until fluffy.
- In a separate bowl, combine lemon juice, sugar, and softened cream cheese. Beat until smooth, then gently stir in the thickened Jell-O mixture followed by the whipped cream.
- Pour the cream cheese filling over the prepared crust and smooth it out. Sprinkle the remaining crushed graham crackers on top for garnish. Refrigerate for at least 2 hours before serving.
Notes
Don’t rush chilling for best results. Use room temperature ingredients for easier mixing. Store leftovers in an airtight container to maintain freshness.
