Ingredients
  

For the crust
  • 3/4 cups Crushed graham crackers For an easy, no-bake crust
  • 1/2 cups Unsalted butter Melted to bind the crust
For the filling
  • 1 box Instant lemon Jell-O mix Adds tanginess to the cheesecake
  • 1 cup Evaporated milk Key for creamy texture
  • 8 oz Cream cheese Make sure it's softened
  • 1/2 cups Granulated sugar
  • 1 tablespoon Lemon juice

Method
 

Preparation
  1. In a bowl, add 1 cup of boiling water to the lemon Jell-O mix and stir until fully dissolved. Place it in the fridge to thicken, which will take about 15 minutes.
  2. Combine melted butter with three-quarters of the crushed graham crackers in a large bowl until crumbly. Press this mixture into the bottom of a 9x13 baking dish for a firm crust.
  3. In another bowl, beat evaporated milk with a handheld mixer until fluffy.
  4. In a separate bowl, combine lemon juice, sugar, and softened cream cheese. Beat until smooth, then gently stir in the thickened Jell-O mixture followed by the whipped cream.
  5. Pour the cream cheese filling over the prepared crust and smooth it out. Sprinkle the remaining crushed graham crackers on top for garnish. Refrigerate for at least 2 hours before serving.

Notes

Don’t rush chilling for best results. Use room temperature ingredients for easier mixing. Store leftovers in an airtight container to maintain freshness.
