  • 2 pounds hot breakfast sausage Use hot sausage for a kick.
  • 1 30–32 ounces bag frozen tater tots
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 1/2 cups shredded cheddar cheese Shred cheese fresh for meltier texture.
  • 1/2 cup mozzarella cheese
  • 8 large eggs Room-temperature eggs bind better.
  • 2 cups milk

Preparation
  1. Preheat the oven to 175°C (350°F) and spray a 9x13-inch pan.
  2. Heat a large skillet over medium and add the sausage; cook until crumbly and browned. Drain off excess grease.
  3. In a large bowl, toss the browned sausage with the cheddar, mozzarella, and frozen tater tots until evenly coated.
  4. Transfer this mix into the prepared pan and spread into an even layer, with tots peeking through the cheese.
  5. Whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until smooth and slightly frothy.
  6. Pour the egg mixture over the tater tots, gently stir once to settle the eggs around the pieces; do not overmix.
  7. Bake for about 60 minutes until the top looks set, edges are golden, and a knife in the center comes out mostly clean with a few moist crumbs.
  8. Let it rest for 5-10 minutes before serving.

Notes

For the best flavors, brown the sausage the night before and keep it chilled. If the casserole comes out too soggy, bake uncovered for an additional 10-15 minutes to crisp the edges. Consider adding green chilies or substituting with mild sausage and a pinch of cayenne.
