Preparation
- Preheat your oven to 350°F (180°C).
- In a large 12-inch cast iron skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add 1.5 pounds of lean ground beef and sauté until no longer pink, about 6-8 minutes. Drain the fat.
- Stir in 1 diced onion and 2 diced bell peppers and cook for 2-3 minutes until softened.
- Add 3 minced garlic cloves, 1 teaspoon of Italian seasoning, 2 teaspoons Worcestershire sauce, and season with 0.5 teaspoon salt and 0.25 teaspoon ground black pepper, cooking for an additional 30 seconds.
- Add 14 ounces of canned diced tomatoes, 1 cup of long grain white rice, and 1.5 cups of beef broth. Stir well and bring to a boil.
Baking
- Cover the skillet and carefully transfer it to the preheated oven.
- Bake for 20-25 minutes, or until the rice is tender. If the rice appears crunchy, add a splash of water and return to the oven.
- Remove the skillet from the oven and sprinkle 1.5 cups of shredded cheese on top.
- Broil for 3-5 minutes until the cheese is melted and bubbly.
Notes
You can prepare it a day in advance. Store leftovers in an airtight container for up to 4 days in the refrigerator. Freezer-friendly for up to 3 months. Reheat in the oven at 350°F for about 20 minutes.
