Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your 9×5 inch loaf pan.
  2. In a large bowl, whisk together the granulated sugar, milk, oil, egg, and vanilla extract until smooth.
  3. In another bowl, mix the flour, baking powder, and salt. Gradually fold this mixture into the wet ingredients until just combined.
  4. Toss the diced strawberries with 2 tablespoons of flour to coat them, then gently fold them into the batter for even distribution.
Baking
  1. Transfer your batter into the prepared loaf pan and bake for 50-55 minutes. Check for doneness by inserting a toothpick; it should come out clean.
  2. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.
Glazing
  1. For the glaze, whisk together powdered sugar, melted butter, finely diced strawberries, and vanilla extract. Add cream or milk to achieve your desired consistency, then drizzle it over the cooled bread.

Notes

Avoid overmixing to prevent a dense loaf. Store in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
