  • 1 lb Beef stew meat Choose well-marbled cuts for a tender finish.
  • 3 medium Carrots Always peel and slice them for even cooking.
  • 2 medium Potatoes Opt for waxy potatoes that hold their shape.
  • 1 medium Onion Chopped onion provides aromatic depth.
  • 4 cups Beef broth Use low-sodium broth for better control over seasoning.

Preparation
  1. Prepare the slow cooker by placing it on a stable surface and plugging it in.
  2. Toss in the chopped onions, diced potatoes, and sliced carrots, layering them at the bottom.
  3. Sprinkle with salt and pepper, then pour the beef broth over the vegetables.
  4. Gently nestle the beef stew meat on top of the vegetables and broth.
  5. Cover and cook on low for 7-8 hours or on high for 4-5 hours until beef is tender.
  6. Dish out the soup into bowls and enjoy hot, optionally garnishing with fresh herbs.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. It can be frozen for up to 3 months. Reheat on the stove for best results.
