Ingredients
  

Main Ingredients
  • 3-4 pounds sirloin tip roast
  • 4 cloves garlic, minced Fresh garlic = bigger flavor.
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper Substitute with smoked paprika for a milder taste if desired.
  • 2 teaspoons dried herbs (such as thyme or rosemary) Dry herbs are fine if fresh aren’t available.
  • to taste salt and pepper
  • splash olive oil Use a high-smoke-point oil for searing.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to get it ready while you work the roast.
  2. Mix the minced garlic, paprika, cayenne, dried herbs, salt, and pepper in a small bowl.
  3. Rub the spice mix all over the Sirloin Tip Roast, pressing it into the meat generously.
Searing
  1. Heat a splash of olive oil in a large oven-safe skillet over medium-high heat until it shimmers.
  2. Sear the roast on all sides until you achieve a deep brown crust.
Cooking
  1. Transfer the skillet with the roast to the preheated oven and roast for about 1 hour, checking for doneness at 50 minutes.
  2. Use a meat thermometer: 135°F for medium-rare, 145°F for medium.
  3. Remove the roast and let it rest for 10–15 minutes before slicing.
  4. Slice against the grain into even pieces and serve with the pan juices drizzled over.

Notes

Mix the rub ahead and keep it in a jar for quick weeknight roasts. Don’t skip the sear; if the crust doesn’t brown, dry the roast with paper towels first.
