Filling Ingredients
  • 4 cups Fresh strawberries, sliced Use ripe strawberries for the best flavor.
  • 1 cup Sugar
  • 2 tablespoons Cornstarch
  • 1 cup Water
  • 2 tablespoons Lemon juice Add flavor to the filling.
  • 1 pie crust Flaky pie crust Choose store-bought for easier prep.
  • 1 tablespoon Gelatin (optional for glaze)

Method

Preparation
  1. Preheat the oven according to the pie crust instructions.
  2. Prepare the pie crust and bake until golden and crisp, about 10-12 minutes.
  3. In a saucepan, combine sugar, cornstarch, and water over medium heat. Stir until the mixture thickens, and then bring it to a gentle boil.
  4. Pour in lemon juice and mix well, allowing the aroma to fill your kitchen.
  5. Remove the saucepan from heat and let the mixture cool slightly so it thickens just enough.
  6. Gently stir in the sliced fresh strawberries, ensuring they are well-coated in the syrup.
  7. Pour the fruity filling into the baked pie crust, spreading it evenly.
  8. Refrigerate the pie for at least 2-3 hours, or until set.
  9. Slice into the chilled pie, and indulge in your delicious homemade Shoney's Strawberry Pie!

Notes

Keep the pie covered in the fridge for up to 3 days. Slices can be frozen for about a month, but the texture may change. Enjoy chilled; do not reheat as it affects the filling's consistency. Leftover pieces make a fantastic addition to a fruit salad.
