For the cake
  • 1 box Yellow or butter cake mix Opt for a quality brand like Duncan Hines.
  • 1 cup Pineapple juice Fresh juice yields the best flavor.
  • 1/2 cup Vegetable oil Helps create a moist cake; avoid using olive oil.
  • 1/2 cup Unsalted butter Used in the glaze for richness.
  • 2 cups Powdered sugar Essential for the glaze.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease and flour a bundt pan.
  2. In a large bowl, mix the cake mix, vegetable oil, eggs, and pineapple juice until smooth.
  3. Pour the batter into the prepared bundt pan and smooth the top.
Baking
  1. Bake the cake for 38-45 minutes, or until a toothpick inserted in the center comes out clean.
Glazing
  1. While the cake bakes, mix together powdered sugar, pineapple juice, and melted butter in a small saucepan over low heat until smooth.
  2. Once the cake has cooled slightly, poke holes across the top and pour the glaze over it.
Serving
  1. Cool the cake completely in the pan before inverting onto a platter. Serve at room temperature.

Notes

Don’t overmix the batter to avoid a dense cake. Serve chilled for a refreshing treat in warm weather. Variations include adding shredded coconut, chocolate drizzle, or nuts for added flavor.
