  • 1 cup pecan halves Choose fresh, high-quality pecans.

Crust
  • 2 ready-made pie crusts Use two crusts, one for bottom and one for topping.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Grease a 9×13-inch baking dish with melted butter.
  3. Unroll one pie crust and press it into the bottom of the prepared baking dish.
Mixing Filling
  1. In a large bowl, whisk together the eggs, light corn syrup, vanilla extract, melted butter, and brown sugar until smooth.
  2. Stir in the chopped pecans, distributing them evenly in the mixture.
Assembling and Baking
  1. Pour half of the pecan filling into the baking dish, then place the second pie crust over it, pressing down gently.
  2. Brush the crust with melted butter, and bake for 15 minutes.
  3. Lower the oven temperature to 350°F (175°C) and pour the remaining filling over the crust.
  4. Bake for an additional 30 minutes until the filling is set and the top is golden brown.

Notes

Let the cobbler cool to room temperature before serving to allow the filling to set properly. Store leftovers in an airtight container for up to 3 days.
