Preparation
  1. First, peel the bananas and slice them into β…“-inch thick rounds. Lay them out so they cook evenly.
  2. Next, whisk sugar, cinnamon, and nutmeg in a small bowl until uniform and fragrant.
Cooking
  1. Meanwhile, warm a large skillet over medium-low heat and lightly spray it with nonstick spray. You want gentle heat.
  2. Then, add the banana rounds in a single layer. Listen for a soft sizzle; that means the sugar is starting to melt.
  3. Sprinkle half the spice mixture over the bananas and let them cook for 2–3 minutes. Watch for golden edges and a glossy, slightly sticky surface.
  4. Flip each slice carefully with a spatula. Sprinkle the remaining spice mix and cook for another 2–3 minutes until tender and warmed through. The bananas should be soft but not falling apart.
  5. Finally, slide them onto a plate and serve warm.

Notes

Slice bananas ahead and chill briefly for a time-saver. Cooking too hot burns the sugar; lower the heat and be patient. You can add a pinch of cardamom or a drizzle of honey for floral sweetness.
