  • 1 lb Smoked sausage, sliced into rounds (kielbasa or andouille)
  • 2 cups Potatoes, cut into bite-sized pieces (Yukon or red)
  • 1 cup Bell peppers, chopped (any color)
  • 1 medium Onion, sliced into wedges
  • 1-2 tsp Smoked paprika
  • 2-3 cloves Garlic, minced (fresh garlic = bigger flavor)
  • 1 tsp Thyme (fresh or dried)
  • 1 cup White cheddar cheese, shredded (melts nicely when added late)
  • 2-3 tbsp Olive oil (good olive oil = cleaner taste)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and prepare your sheet pan.
  2. Cut the smoked sausage, potatoes, bell peppers, and onions into bite-sized pieces.
  3. In a large bowl, toss the sausage and vegetables with olive oil, smoked paprika, minced garlic, thyme, salt, and pepper until well coated.
  4. Spread the mixture in a single layer on a rimmed baking sheet, ensuring pieces are not overcrowded.
Cooking
  1. Roast in the preheated oven for 25–30 minutes, turning once halfway through, until the potatoes are golden and fork-tender.
  2. In the last 5 minutes of roasting, sprinkle the shredded white cheddar over the top to melt.
  3. Remove from the oven and serve hot.

Notes

Time-saver: Parboil potatoes for 5 minutes if short on time. Avoid crowding the pan to ensure even roasting. Try adding cayenne for heat or using rosemary for an aromatic twist.
