Ingredients
  

Potatoes and Seasoning
  • 4 medium medium yellow potatoes, scrubbed (not peeled) Use waxy yellow potatoes for creamier centers.
  • 3 tablespoons olive oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ½ teaspoon dried parsley
  • ½ teaspoon salt, or to taste
  • 4 tablespoons shredded Parmesan cheese, divided For topping.

Preparation
  1. Preheat your oven to 450°F (232°C) and line a rimmed baking sheet with parchment paper.
  2. Slice the potatoes into ¼-inch thick rounds using a mandoline or a sharp knife.
  3. In a large bowl, add olive oil, garlic powder, onion powder, pepper, parsley, salt, and 2 tablespoons of Parmesan to the potato slices. Toss until evenly coated.
Cooking
  1. Arrange the slices in a single layer on the prepared baking sheet, avoiding overlap.
  2. Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
  3. Check for doneness: centers should be tender when pierced and rims should be deeply golden.
  4. Sprinkle the remaining Parmesan over the potatoes and bake for an additional 3 minutes or until the cheese melts and bubbles.
Serving
  1. Remove from the oven and serve hot with your favorite dipping sauce.

Notes

You can slice and season potatoes while the oven heats. Avoid overlapping slices in the baking tray.
