Pasta and Sauces
  • 12 ounces Spaghetti or Linguine You may also use penne or fusilli.
  • 2 tablespoons Butter
  • 2 tablespoons Olive oil
  • 3 cups Low sodium chicken or vegetable broth
  • 1 cup Milk
  • 1 cup Parmesan cheese, freshly grated Avoid pre-grated varieties for better melting.
  • 2 tablespoons Fresh minced garlic Provide better flavor than jarred.
  • 1 pinch Red pepper flakes Optional for a little heat.
  • Salt to taste Salt Adjust based on broth used.
  • Pepper to taste Black pepper Adjust as desired.

Preparation
  1. In a large skillet, heat the butter and olive oil over medium heat until melted and bubbling.
  2. Add minced garlic and a pinch of red pepper flakes, cooking for 30 seconds until fragrant but not browned.
  3. Pour in the broth and milk, stirring in a pinch of salt. Bring this mixture to a gentle simmer.
  4. Add the pasta, bending it to fit into the skillet, and stir to separate. Simmer for about 8-10 minutes until al dente and the liquid reduces to a light sauce.
  5. Turn off the heat and sprinkle in freshly grated Parmesan. Stir until melted and creamy. Taste for seasoning and adjust with salt and pepper as needed.
  6. Serve hot, adding parsley and lemon zest for freshness if desired.

Bring your ingredients to room temperature for the best results. Use fresh Parmesan for optimal flavor.
