Ingredients
  

For the crust
  • 1 cup Unsalted butter, softened Always use unsalted butter for baking.
  • 2/3 cup Granulated sugar Crucial for balancing the flavors.
  • 2 1/4 cups All-purpose flour For the crust.

For the filling
  • 3 large Eggs Use room temperature for better mixing.
  • 1 cup Light corn syrup Gives a rich, sticky texture.
  • 1 cup Packed light brown sugar Adds sweetness and richness.
  • 2 tablespoons Melted unsalted butter
  • 1 teaspoon Vanilla extract Enhances the flavor.
  • 1/4 teaspoon Fine salt To balance the sweetness.
  • 2 1/2 cups Chopped and lightly toasted pecans Provides crunch and flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together 1 cup of softened unsalted butter and 2/3 cup of granulated sugar until fluffy and light.
  3. Add 2 1/4 cups of all-purpose flour and 1/2 teaspoon of fine salt, mixing just until combined.
  4. Transfer the crust mixture to a lined 9x13-inch pan, pressing it down evenly and docking with a fork.
  5. Place in the oven for 18-20 minutes until the edges are lightly golden.
Filling
  1. While the crust bakes, whisk together 3 large eggs, 1 cup of light corn syrup, 1 cup of packed light brown sugar, 2 tablespoons of melted unsalted butter, 1 teaspoon of vanilla extract, and 1/4 teaspoon of fine salt.
  2. Fold in 2 1/2 cups of chopped and lightly toasted pecans.
Baking
  1. Once the crust is done, pour the filling over the hot crust and spread it evenly.
  2. Return the pan to the oven and bake for 25-30 minutes until the center is set and does not jiggle.
  3. Allow the bars to cool completely in the pan before lifting them out using the parchment paper and cutting them into squares.

Notes

Letting the bars cool completely in the pan is crucial for them to set properly. Feel free to customize these bars by adding chocolate chips or substituting half the pecans with walnuts or almonds.
