Preparation
  1. Prepare the cornbread: Make or purchase your cornbread ahead of time and allow it to dry out uncovered overnight.
  2. Sauté the vegetables: In a large skillet over medium heat, melt one stick of butter and add diced onion and celery. Cook until soft and fragrant, about 10 minutes.
  3. Combine the bread and vegetables: In a big bowl, mix the crumbled cornbread and optional bread cubes, then pour the warm buttered vegetables over the mixture.
  4. Whisk the liquid ingredients: In a separate bowl, combine warmed broth, milk, eggs, sage, thyme, salt, and black pepper. Pour half over the bread and toss gently, adding the rest until fully moistened.
  5. Transfer to the baking dish: Spread the mixture into a greased 9×13 dish, ensuring that it’s about 2-3 inches deep.
Baking
  1. Cover with foil and bake at 350°F (175°C) for 30 minutes.
  2. Remove the foil and bake for an additional 20-30 minutes until golden brown and set in the middle.
  3. Let it rest for at least 10 minutes before scooping.

Notes

For best results, use day-old cornbread and keep your broth warm before adding to enhance flavor. Customize with your favorite herbs and consider variations like adding jalapeño for spice or cheese for richness.
