Preparation
- Prepare the cornbread: Make or purchase your cornbread ahead of time and allow it to dry out uncovered overnight.
- Sauté the vegetables: In a large skillet over medium heat, melt one stick of butter and add diced onion and celery. Cook until soft and fragrant, about 10 minutes.
- Combine the bread and vegetables: In a big bowl, mix the crumbled cornbread and optional bread cubes, then pour the warm buttered vegetables over the mixture.
- Whisk the liquid ingredients: In a separate bowl, combine warmed broth, milk, eggs, sage, thyme, salt, and black pepper. Pour half over the bread and toss gently, adding the rest until fully moistened.
- Transfer to the baking dish: Spread the mixture into a greased 9×13 dish, ensuring that it’s about 2-3 inches deep.
Baking
- Cover with foil and bake at 350°F (175°C) for 30 minutes.
- Remove the foil and bake for an additional 20-30 minutes until golden brown and set in the middle.
- Let it rest for at least 10 minutes before scooping.
