For the crust
  • 1/2 cup melted butter Use unsalted butter for the best flavor.
  • 1/2 cup sugar
  • 20 pieces crushed graham crackers Crush into fine crumbs for a better crust.
For the filling
  • 8 oz softened cream cheese Let it sit at room temperature for easy mixing.
  • 1 cup powdered sugar
  • 8 oz thawed Cool Whip Opt for a quality brand for the best results.
  • 1 cup drained crushed pineapple Make sure it's well-drained to avoid sogginess.
  • 1/4 cup diced pineapple For topping.
  • 1/4 cup shredded coconut For topping.

Method
 

Preparation
  1. In a mixing bowl, combine melted butter, sugar, and crushed graham crackers until well mixed.
  2. Press the mixture firmly and evenly into the bottom of a greased 9×9-inch baking dish and set aside.
Making the Filling
  1. In a large bowl, use an electric mixer to beat the softened cream cheese until smooth and fluffy.
  2. Slowly add the powdered sugar and mix until fully combined.
  3. Gently fold in the thawed Cool Whip into the cream cheese mixture until smooth and fully integrated.
  4. Stir in the drained crushed pineapple and ensure it’s evenly distributed throughout the filling.
Assembly
  1. Pour and spread the filling evenly over the prepared crust in the baking dish.
  2. Sprinkle diced pineapple and shredded coconut over the top of the filling.
Chilling
  1. Cover and refrigerate for several hours, ideally overnight, until fully set.
  2. Enjoy!
