  • 1 cup crushed pineapple Make sure it is well drained.
  • 1/4 cup shredded coconut Introduces a tropical twist.
For toppings
  • 1/2 cup diced pineapple Use fresh for best results.
  • 1/4 cup shredded coconut For added texture.

Preparation
  1. In a mixing bowl, combine the melted butter, granulated sugar, and crushed graham crackers. Mix well until the texture resembles wet sand.
  2. Press the mixture firmly and evenly into the bottom of a greased 9x9-inch baking dish.
Making the filling
  1. In a separate large bowl, beat the softened cream cheese until smooth and fluffy.
  2. Add in the powdered sugar and stir until fully incorporated without lumps.
  3. Gently fold the Cool Whip into the cream cheese mixture until smooth.
  4. Stir in the well-drained crushed pineapple until evenly distributed.
Assembly
  1. Pour the filling over the prepared graham cracker crust, and smooth it out evenly.
  2. Sprinkle diced pineapple and shredded coconut on top before covering and refrigerating until set, preferably for several hours.

Notes

Let cream cheese soften at room temperature. Use well-drained pineapple for best texture. Allow dessert to set for at least 4 hours or overnight.
