Preparation
- In a mixing bowl, combine the melted butter, granulated sugar, and crushed graham crackers. Mix well until the texture resembles wet sand.
- Press the mixture firmly and evenly into the bottom of a greased 9x9-inch baking dish.
Making the filling
- In a separate large bowl, beat the softened cream cheese until smooth and fluffy.
- Add in the powdered sugar and stir until fully incorporated without lumps.
- Gently fold the Cool Whip into the cream cheese mixture until smooth.
- Stir in the well-drained crushed pineapple until evenly distributed.
Assembly
- Pour the filling over the prepared graham cracker crust, and smooth it out evenly.
- Sprinkle diced pineapple and shredded coconut on top before covering and refrigerating until set, preferably for several hours.
Notes
Let cream cheese soften at room temperature. Use well-drained pineapple for best texture. Allow dessert to set for at least 4 hours or overnight.
