- Line a baking sheet with parchment paper to prevent the cookies from sticking.
- In a large saucepan, combine 2 cups sugar, 1/2 cup butter, 1/2 cup milk, and 1/4 cup cocoa powder. Heat gently, stirring until well combined.
- Bring the mixture to a gentle boil, and let it bubble softly for 60 seconds.
- After 60 seconds of boiling, remove from heat and stir in 1/2 cup peanut butter, 1 teaspoon vanilla extract, and a pinch of salt until smooth.
- Stir in 3 cups of oats until they're evenly coated and incorporated into the chocolate mixture.
- Scoop the mixture onto the prepared baking sheet and let sit until the cookies firm up, typically around 30 minutes.

For best results, don't rush the boiling process and let the cookies cool completely. You can add chopped nuts, dried fruits, or chocolate chips for variations.
