Dry Ingredients
  • 2 cups all-purpose flour Room-temp flour for easier mixing.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt Use unsalted butter to control salt.
Wet Ingredients
  • 1/2 cup cold butter, cubed Cold butter helps create flaky layers.
  • 3/4 cup buttermilk Provides tang and tender crumb.

Method
 

Preparation
  1. Preheat the oven to 450°F (230°C). Line a baking sheet.
  2. Whisk together the flour, baking powder, and salt in a large bowl.
  3. Add the cold butter cubes and cut them into the flour mixture until it resembles coarse crumbs with pea-sized bits.
  4. Stir in the buttermilk just until the dough holds together; do not overmix.
  5. Turn the dough onto a lightly floured surface and fold gently 3-4 times.
  6. Roll or pat the dough to about 1 inch thick and cut into rounds.
  7. Place the biscuits on the baking sheet close together for taller sides or farther apart for more crust.
Baking
  1. Bake for 12-15 minutes until the tops are golden and the edges smell toasty.
  2. Serve warm with butter, jam, or gravy.

Notes

To save time, keep butter cubed and frozen; grate it into the flour. Overworking the dough makes tough biscuits—fold gently.
