Ingredients

  • 6 pieces jalapenos
  • 1 cup corn (fresh or canned)
  • 1 cup cream cheese, softened
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup crumbled bacon
  • 1/4 cup cilantro, chopped
  • 1 teaspoon chili powder
  • to taste Salt and pepper
  • as needed Olive oil or cooking spray (for air frying or grilling)

Method
 

Preparation
  1. Preheat the air fryer, grill, or oven to 375°F (190°C).
  2. Cut the jalapenos in half lengthwise, then scoop out the seeds gently.
  3. In a large bowl, combine the cream cheese, corn, shredded cheese, crumbled bacon, cilantro, chili powder, salt, and pepper. Stir until everything is nicely blended.
  4. Generously fill each jalapeno half with the creamy corn mixture, pressing down slightly to pack it in.
  5. Place the stuffed peppers in the air fryer basket, on the grill, or on a baking sheet if baking.
Cooking
  1. Air fry or grill for 10-15 minutes, or pop them in the oven for about 20 minutes. Look for tender jalapenos with bubbly, melted cheese.
Serving
  1. These creamy delights are best served warm as a mouthwatering appetizer.

Notes

Prep jalapenos the night before for time-saving. Avoid overstuffing the jalapenos to prevent the filling from spilling out. Experiment with different cheeses for variety.
