- Pat the chicken dry, then season both sides with salt and pepper. Optionally, lightly dust with flour.
- Heat olive oil and butter in a large skillet over medium-high heat. Sear the chicken for about 6-8 minutes per side until golden brown and cooked through. Transfer to a plate.
- In the same skillet, reduce the heat to medium and add minced garlic. Stir until fragrant, about 1 minute.
- Add the sun-dried tomatoes and chicken broth, scraping up any browned bits, and let it simmer for a couple of minutes.
- Pour in the heavy cream, parmesan cheese, and Italian seasoning. Stir until the cheese melts and the sauce is smooth.
- Return the chicken to the skillet and spoon sauce over it. Simmer for 5-10 minutes until fully cooked, reaching an internal temperature of 165°F (74°C).
- If using, stir in the spinach at the end and allow it to wilt before serving.
Notes
For best results, bring chicken to room temperature before cooking and avoid overcrowding the pan. This dish is great served over pasta or rice, so consider making extra sauce.
