- Preheat your oven to 350°F (175°C).

- In a separate large bowl, cream the softened butter with granulated and brown sugar until smooth and fluffy.
- Beat in the egg, vanilla extract, key lime juice, and lime zest until just incorporated.
- Gradually mix the dry ingredients into the wet ingredients until a dough forms.
- Drop rounded tablespoons of dough onto parchment-lined baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool completely before icing with the glaze made from powdered sugar and key lime juice.
Notes
Don’t overmix the dough to keep the cookies tender. Always use fresh key limes for the best flavor. Let the cookies cool for a few minutes on the baking sheet before transferring them to a wire rack.
