Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour Use King Arthur flour for best results.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter Softened to room temperature.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup key lime juice Freshly squeezed preferred.
  • 1 tablespoon lime zest Freshly grated.
For the Glaze
  • 1 cup powdered sugar Mixed with key lime juice for icing.
  • 2 tablespoons key lime juice Used to make the glaze.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, and salt until well combined.
  3. In a separate large bowl, cream the softened butter with granulated and brown sugar until smooth and fluffy.
  4. Beat in the egg, vanilla extract, key lime juice, and lime zest until just incorporated.
  5. Gradually mix the dry ingredients into the wet ingredients until a dough forms.
  6. Drop rounded tablespoons of dough onto parchment-lined baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool completely before icing with the glaze made from powdered sugar and key lime juice.

Notes

Don’t overmix the dough to keep the cookies tender. Always use fresh key limes for the best flavor. Let the cookies cool for a few minutes on the baking sheet before transferring them to a wire rack.
