Preparation
- Season the ground beef with garlic powder, onion powder, salt, and pepper, then form into two even patties.
- Heat a skillet over medium. Add a touch of oil, then place the patties in the pan. Brown the edges for about 4-5 minutes per side until firm and no longer pink.
- Mix the softened cream cheese with shredded cheddar (or pepper jack) until smooth and slightly fluffy.
Assembly
- Spread the cheese mix on one side of each bread slice.
- Layer a cooked patty on top of a cheese-covered slice, add roasted jalapeño slices and a spoon of caramelized onions.
- Place the other slice of bread on top, cheese side down.
Cooking
- Heat 1 tbsp butter in a clean skillet over medium-low.
- Add the sandwich and press gently with a spatula or panini weight.
- Toast until the bread is golden and the cheese melts, about 3-4 minutes per side.
- Remove, slice, and drizzle BBQ sauce over the top before serving.
Notes
Tips: Caramelize onions ahead and store in the fridge for up to 5 days. For a different crunch, consider cornbread poppers instead.
