Jalapeño Popper Patty Melts

Ingredients
  

For the patties
  • 1 lb ground beef Form into 2 patties
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste Salt and pepper
For the sandwich
  • 4 slices thick bread (Texas toast recommended)
  • 4 oz cream cheese Softened
  • 1/2 cup shredded cheddar or pepper jack
  • 2-3 roasted jalapeños, sliced
  • 1/2 cup caramelized onions
  • 2 tbsp butter For toasting bread
  • to taste BBQ sauce For serving
  • optional crispy bacon, pickled jalapeños, extra cheddar or pepper jack slices

Method
 

Preparation
  1. Season the ground beef with garlic powder, onion powder, salt, and pepper, then form into two even patties.
  2. Heat a skillet over medium. Add a touch of oil, then place the patties in the pan. Brown the edges for about 4-5 minutes per side until firm and no longer pink.
  3. Mix the softened cream cheese with shredded cheddar (or pepper jack) until smooth and slightly fluffy.
Assembly
  1. Spread the cheese mix on one side of each bread slice.
  2. Layer a cooked patty on top of a cheese-covered slice, add roasted jalapeño slices and a spoon of caramelized onions.
  3. Place the other slice of bread on top, cheese side down.
Cooking
  1. Heat 1 tbsp butter in a clean skillet over medium-low.
  2. Add the sandwich and press gently with a spatula or panini weight.
  3. Toast until the bread is golden and the cheese melts, about 3-4 minutes per side.
  4. Remove, slice, and drizzle BBQ sauce over the top before serving.

Notes

Tips: Caramelize onions ahead and store in the fridge for up to 5 days. For a different crunch, consider cornbread poppers instead.
