Ingredients
  

For the meat mixture
  • 1 pound ground beef (or ground turkey/chicken) for a lighter option
  • 1 packet taco seasoning or 2 tablespoons homemade blend
  • cup water for the meat mixture
For the base
  • 8 small tortillas flour (6-inch size)
  • 1 can refried beans (15 oz)
  • ¼ cup water to thin the beans
  • 1 cup red enchilada sauce or mild taco sauce
  • 2 cups shredded Mexican blend cheese or cheddar/Monterey Jack
  • ½ cup diced tomatoes
  • ¼ cup sliced green onions
  • ¼ cup sliced black olives optional
  • Oil for frying tortillas (or cooking spray if baking)

Method
 

Cooking the Meat
  1. In a skillet, brown the ground beef over medium heat, breaking it up with a spoon until fully cooked. Drain any excess fat.
  2. Stir in taco seasoning and ⅔ cup of water. Let it simmer for about 5 minutes until the mixture thickens and the flavors meld.
Preparing the Beans
  1. In a small saucepan, combine the refried beans with ¼ cup of water. Warm them over low heat until they become spreadable.
Frying the Tortillas
  1. Heat 2-3 tablespoons of oil in a skillet. Fry each tortilla for about 1-2 minutes per side, until golden and crisp. Place them on paper towels to drain. (You can also bake them brushed with oil until crispy for a healthier version.)
Assembling the Pizza
  1. Spread a layer of warmed refried beans on 4 of the crispy tortillas. Then add a generous layer of the seasoned meat mixture.
  2. Top each meat layer with another crispy tortilla, creating a little sandwich.
  3. Spoon enchilada sauce over the top of these tortillas and sprinkle generously with cheese.
  4. Add diced tomatoes, sliced green onions, and black olives if you like.
  5. For an extra touch, pop them under the broiler for a minute to get that cheese perfectly melted and bubbly.
  6. Slice into wedges and dig in while warm!
