Fruit Layer

Method
 

Prepare the Pudding
  1. In a medium saucepan over medium heat, whisk together milk, sugar, cornstarch, and salt until thickened, about 10 minutes.
  2. In a separate bowl, beat the egg yolks and gradually whisk in about 1 cup of hot pudding mixture to temper the eggs, then return it to the saucepan.
  3. Stir constantly over medium heat until silky, about another 3-5 minutes.
Finish the Pudding
  1. Remove from heat and stir in the butter and vanilla extract.
Prepare Bananas
  1. Peel and slice the bananas into coins, optionally brushing with lemon juice to prevent browning.
Layer the Ingredients
  1. In a 9x13 baking dish, create layers with vanilla wafers, sliced bananas, and warm pudding.
  2. Repeat layers until all ingredients are used, finishing with pudding on top.
