Muffin Batter Ingredients
  • 4 cups All-purpose flour King Arthur flour preferred for best texture.
  • 1 cup Warm milk About 105°F to 110°F (40°C to 43°C) for optimal yeast activation.
  • 2 teaspoons Active dry yeast Check for freshness.
  • 1/4 cup Sugar For activating yeast.
  • 1/4 cup Melted butter For rich flavor.
  • 1 teaspoon Salt To enhance flavor.
  • 1/4 cup Cornmeal Adds texture to the exterior.

Method
 

Preparation
  1. In a bowl, combine warm milk, sugar, and yeast. Let sit for about 5 minutes until frothy.
  2. In a larger bowl, mix flour and salt. Make a well in the center and add the yeast mixture and melted butter.
  3. Mix until a dough forms and knead for about 5 minutes until smooth.
  4. Shape the dough into a ball, place it in a greased bowl, and cover. Let rise in a warm place for about 1 hour or until doubled in size.
Cooking
  1. Punch down the dough and roll it to about 1/2 inch thickness. Cut into rounds and dust the cut sides with cornmeal.
  2. Heat a skillet over low heat and cook muffins for about 7-10 minutes on each side until golden brown.
  3. Let cool before slicing and serving with butter and jam.

Notes

Don’t rush the rising time for a light muffin. After baking, cool completely before slicing.
