Preparation
- In a bowl, combine warm milk, sugar, and yeast. Let sit for about 5 minutes until frothy.
- In a larger bowl, mix flour and salt. Make a well in the center and add the yeast mixture and melted butter.
- Mix until a dough forms and knead for about 5 minutes until smooth.
- Shape the dough into a ball, place it in a greased bowl, and cover. Let rise in a warm place for about 1 hour or until doubled in size.
Cooking
- Punch down the dough and roll it to about 1/2 inch thickness. Cut into rounds and dust the cut sides with cornmeal.
- Heat a skillet over low heat and cook muffins for about 7-10 minutes on each side until golden brown.
- Let cool before slicing and serving with butter and jam.
Notes
Don’t rush the rising time for a light muffin. After baking, cool completely before slicing.
