  • 2 cups all-purpose flour Preferably King Arthur flour for consistent results.
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon Optional.
  • 1/2 cup unsalted butter Use softened butter for best mixing results.
  • 3/4 cup sugar
  • 2 large eggs Should be at room temperature.
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas Use very ripe bananas for sweetness.
  • 1/2 cup sour cream Alternatively, plain yogurt may be used.
  • 3/4 cup chopped walnuts Toast lightly for added flavor.
Cream Cheese Topping
  • 4 ounces cream cheese Softened, for smooth mixing.
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cold heavy cream To be whipped separately.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round pan or an 8-inch square pan, lining the bottom with parchment paper.
  2. In a bowl, whisk together the dry ingredients: all-purpose flour, baking powder, baking soda, salt, and optional cinnamon.
  3. In a larger bowl, cream the softened unsalted butter and sugar together with a hand mixer until light and fluffy.
  4. Add the eggs, vanilla extract, mashed bananas, and sour cream to the butter-sugar mixture until well combined.
  5. Gradually fold the dry flour mixture into the wet ingredients until no flour remains; then gently fold in the chopped walnuts.
Baking
  1. Pour the batter into the prepared pan and smooth the top.
  2. Bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the cake cool in the pan for 10 minutes, then transfer it to a cooling rack to cool completely.
Finishing Touches
  1. In a bowl, beat the softened cream cheese until smooth, then add powdered sugar and vanilla extract, combining well.
  2. In a separate bowl, whip the cold heavy cream until soft peaks form, then gently fold it into the cream cheese mixture.
  3. Spread the cream topping over the cooled cake and garnish with extra walnuts or banana slices if desired.

Notes

For a firmer cream topping, refrigerate for about 30 minutes before spreading on the cake.
