Preparation
- Preheat your oven to 350°F (175°C) and grease a 9-inch round pan or an 8-inch square pan, lining the bottom with parchment paper.
- In a bowl, whisk together the dry ingredients: all-purpose flour, baking powder, baking soda, salt, and optional cinnamon.
- In a larger bowl, cream the softened unsalted butter and sugar together with a hand mixer until light and fluffy.
- Add the eggs, vanilla extract, mashed bananas, and sour cream to the butter-sugar mixture until well combined.
- Gradually fold the dry flour mixture into the wet ingredients until no flour remains; then gently fold in the chopped walnuts.
Baking
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a cooling rack to cool completely.
Finishing Touches
- In a bowl, beat the softened cream cheese until smooth, then add powdered sugar and vanilla extract, combining well.
- In a separate bowl, whip the cold heavy cream until soft peaks form, then gently fold it into the cream cheese mixture.
- Spread the cream topping over the cooled cake and garnish with extra walnuts or banana slices if desired.
