Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the rolled oats, oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, whisk together the melted coconut oil, coconut sugar, maple syrup, flax egg, and vanilla until thoroughly combined.
- Gradually add the dry mixture to the wet mixture, stirring until a thick dough forms.
- Using a medium cookie scoop, drop balls of dough onto the prepared baking sheet and flatten each ball slightly with a fork.
Baking
- Bake the cookies for 8-12 minutes until lightly golden around the edges.
- Allow the cookies to cool on the baking sheet for 10 minutes before transferring to a cooling rack.
Notes
Space the cookies out to ensure even baking and prevent sticking. Bring ingredients to room temperature for better results.
