  • 2 cups rolled oats Look for organic rolled oats for the best flavor and texture.
  • 1 cup oat flour Can substitute with white whole wheat flour.
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
Wet Ingredients
  • 1/2 cup melted coconut oil Refined coconut oil for a neutral flavor.
  • 1/2 cup coconut sugar A lower glycemic index sweetener.
  • 1/4 cup maple syrup Adds moisture and complements the flavors.
  • 1 flax egg flax egg Can substitute with regular egg or mashed banana.
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the rolled oats, oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, whisk together the melted coconut oil, coconut sugar, maple syrup, flax egg, and vanilla until thoroughly combined.
  4. Gradually add the dry mixture to the wet mixture, stirring until a thick dough forms.
  5. Using a medium cookie scoop, drop balls of dough onto the prepared baking sheet and flatten each ball slightly with a fork.
Baking
  1. Bake the cookies for 8-12 minutes until lightly golden around the edges.
  2. Allow the cookies to cool on the baking sheet for 10 minutes before transferring to a cooling rack.

Notes

Space the cookies out to ensure even baking and prevent sticking. Bring ingredients to room temperature for better results.
