  • 1 lb Chicken (breasts or thighs) Use thighs for juiciness or breasts for a leaner option.
  • 2 medium Carrots, diced Adds sweetness and texture.
  • 2 stalks Celery, chopped Essential for depth of flavor.
  • 1 medium Onion, diced Provides a foundational flavor.
  • 3 cloves Garlic, minced Add fresh garlic for a punchy flavor.

  1. In a large pot, heat a dash of oil over medium heat. Add diced onion, sliced carrots, and chopped celery, cooking until the vegetables are softened (about 5-7 minutes).
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Lay the chicken in the pot and pour in enough broth to cover everything. Bring the heat to high until it simmers, then cover and reduce the heat, cooking for at least 20 minutes.
  4. Once cooked through, remove the chicken using a fork and shred it before returning it to the pot.
  5. Stir in fresh spinach or kale just before serving for a nutritious boost.
  6. Taste the soup and adjust the salt and pepper as needed.

Notes

This soup is customizable. Add other vegetables, spicy elements, or noodles as desired. Store in the fridge for up to 3 days or in the freezer for 2 months.
