  • 1 lb ground beef Use lean ground beef for better texture.
  • 1 can enchilada sauce Choose mild or hot, based on preference.
  • 1 cup salsa Chunkier salsa adds texture.
  • 2 cups shredded cheddar cheese Freshly shredded melts better.
  • 6 pieces flour tortillas Warm slightly to prevent tearing.
  • 1 can corn Drain well to avoid soggy layers.
  • to taste salt and pepper Adjust at the end of cooking.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Prepare the baking dish for layering.
  2. Heat a skillet over medium heat, add the ground beef, and brown until fully cooked.
  3. Drain excess fat and return the pan to low heat. Stir in the enchilada sauce and salsa, simmer until thickened.
  4. Lightly warm the tortillas so they can bend without breaking.
Assembly
  1. In a baking dish, layer 2 tortillas, spread half the meat mixture, sprinkle half the corn, and add a layer of cheese.
  2. Repeat the layers, then top with the remaining tortillas and cheese. Press lightly.
Baking
  1. Bake for 25-30 minutes until cheese bubbles and edges turn golden.
  2. Let it rest for 5 minutes before cutting to ensure neat slices.

Notes
