Preparation
- Preheat the oven to 350°F (175°C). Prepare the baking dish for layering.
- Heat a skillet over medium heat, add the ground beef, and brown until fully cooked.
- Drain excess fat and return the pan to low heat. Stir in the enchilada sauce and salsa, simmer until thickened.
- Lightly warm the tortillas so they can bend without breaking.
Assembly
- In a baking dish, layer 2 tortillas, spread half the meat mixture, sprinkle half the corn, and add a layer of cheese.
- Repeat the layers, then top with the remaining tortillas and cheese. Press lightly.
Baking
- Bake for 25-30 minutes until cheese bubbles and edges turn golden.
- Let it rest for 5 minutes before cutting to ensure neat slices.
