Ingredients
  

Meatloaf Mixture
  • 1 lb Ground chicken A lean option that doesn’t sacrifice flavor.
  • 1/2 cup Grated Parmesan cheese The secret for adding rich, savory flavor.
  • 1/2 cup Breadcrumbs Preferably seasoned breadcrumbs for extra flavor.
  • 2 cloves Fresh garlic, minced Fresh provides a punchy aromatic flavor.
  • 1 Egg At room temperature for better incorporation.
  • 1/4 cup Milk
  • 1 tsp Parsley, chopped
  • 1/2 tsp Oregano, dried
  • 1/2 tsp Onion powder
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
Toppings
  • 1 cup Marinara sauce For topping the meatloaves.
  • 1 cup Shredded mozzarella cheese For topping.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) for even cooking.
  2. In a large bowl, combine ground chicken, parmesan, breadcrumbs, minced garlic, egg, milk, parsley, oregano, onion powder, salt, and pepper until evenly mixed.
  3. Form the mixture into small loaves and place them on a lined baking sheet.
Cooking
  1. Bake for 25 minutes until the internal temperature reaches 165°F (74°C).
  2. Spoon marinara sauce over each meatloaf and top with shredded mozzarella. Return to oven for an additional 5 minutes until cheese is melted and bubbly.
  3. Allow the meatloaves to cool slightly, garnish with parsley and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat in the oven for best texture.
