Ingredients
  

For the Chicken
  • 2 pieces chicken breasts, cubed Use skinless for a healthier option.
  • ½ teaspoon salt For seasoning chicken.

  • 1 teaspoon paprika For seasoning chicken.
  • 1 teaspoon onion powder For seasoning chicken.
  • 1 teaspoon Italian seasoning For seasoning chicken.
  • 2 tablespoons minced garlic Fresh garlic gives bigger flavor.
  • 2 tablespoons butter Unsalted helps control salt.
  • as desired Buffalo Wild Wings Garlic Parmesan Sauce Add to taste.
For the Potatoes
  • 4-5 pieces small/medium-sized potatoes, cubed Yukon Gold or red potatoes work well.
  • 1-2 tablespoons olive oil For tossing the potatoes.
  • 1 teaspoon salt For seasoning potatoes.
  • 1 teaspoon pepper For seasoning potatoes.
  • 1 teaspoon garlic powder For seasoning potatoes.
  • 1 teaspoon paprika For seasoning potatoes.
For the Topping
  • 1 cup shredded mozzarella cheese Substitute with provolone if desired.

Method
 

Preparation
  1. Wash, peel, and cut the potatoes into small cubes.
  2. Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika until well coated.
Cooking the Potatoes
  1. Air fry the potatoes at 400°F for about 20 minutes, shaking the basket twice for even browning.
Cooking the Chicken
  1. Cut the chicken into small cubes and season with salt, pepper, paprika, onion powder, and Italian seasoning.
  2. Heat butter in a skillet over medium-high heat until foamy. Add the chicken and brown on all sides until cooked through (165°F).
  3. Stir in minced garlic and add the Buffalo Wild Wings Garlic Parmesan Sauce. Cook for an additional 1-2 minutes until the sauce thickens.
Finishing Touches
  1. Add the air-fried potatoes to the skillet and toss to coat them in the sauce.
  2. Sprinkle mozzarella over the top and cover to melt or broil for a few minutes until bubbly and golden.

Notes

Consider a garnish of chopped parsley, extra grated Parmesan, or even candied orange slices for a sweet contrast.
