Preparation
  1. Pat the chicken dry with paper towels and season both sides generously with salt and pepper.
  2. In a large skillet over medium heat, heat 1-2 tablespoons of olive oil and 1 tablespoon of butter.
  3. Add the chicken and cook without moving it for about 4 to 6 minutes per side until cooked through.
Sauce Preparation
  1. Move the chicken to a plate. Lower the heat and add the remaining butter to the pan.
  2. Add minced garlic and stir for about 30 seconds to 1 minute until fragrant, being careful not to let it burn.
  3. Pour in the chicken broth and scrape up the browned bits from the bottom of the pan.
  4. Add Italian seasoning or parsley and red pepper flakes if using. Let the sauce bubble for 2 to 4 minutes to reduce slightly.
Serving
  1. Return the chicken to the pan and spoon the sauce over it. Warm for another minute or two before serving.

Notes

Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C). Garlic can burn quickly, so watch it closely. You can double the chicken broth and butter for extra sauce without affecting flavor.
