  • 1 loaf garlic bread
  • 2 pieces ripe tomatoes, diced Best bright flavor
  • to taste Fresh basil leaves, chopped Tear, don’t chop finely
  • to taste Olive oil Good olive oil = noticeable finish
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and get a tray ready.
  2. Prepare the garlic bread according to the package or your homemade recipe and place it on the tray.
Cooking
  1. Slide the bread into the oven and toast until the edges turn golden and the butter melts, about 6–10 minutes.
  2. In a bowl, mix the diced tomatoes with chopped basil, a good drizzle of olive oil, and salt and pepper. Stir gently so the tomatoes stay juicy.
  3. Once the bread looks golden and crisp, remove it from the oven and immediately top each slice with the tomato and basil mixture.
  4. Serve right away and enjoy the contrast of hot toast and cool tomatoes.

Notes

For a heartier sandwich, serve alongside a Bacon Lettuce Tomato Sandwich. Time-saver: Dice tomatoes while the bread heats. If the tomatoes seem too soggy, drain excess juice on a paper towel before topping. For added heat, consider adding a pinch of red pepper flakes or swapping basil for oregano. Store refrigerated in an airtight container for up to 2 days or freeze plain toasted bread for up to 1 month.
