Sauce Ingredients

  1. Preheat the grill: Set it to 400°F (200°C) to ensure even charring.
  2. Grill the corn: Place the corn directly on the grill grates, cooking for about 10–12 minutes, turning occasionally until tender and marked.
  3. Prepare the sauce: In a mixing bowl, combine sour cream, mayonnaise, cotija cheese, crushed garlic, lime zest, lime juice, salt, and cilantro until creamy.
  4. Coat the corn: Once grilled, remove corn and let it cool slightly before spreading the creamy mixture generously over each ear.
  5. Add spice: Sprinkle chipotle chili powder over the coated corn for an extra kick.
  6. Garnish: Top with additional crumbled cotija cheese and chopped cilantro before serving.
