Preparation
- In a large pot, bring salted water to a boil, then add 2 cups of elbow macaroni. Cook until just tender, about 7–8 minutes. Drain and rinse with cool water to stop the cooking process.
- In a mixing bowl, combine 1 cup of mayonnaise, 1 tablespoon of mustard, 1 tablespoon of vinegar or pickle juice, 1 teaspoon of sugar, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Taste and adjust seasoning as needed.
- Dice 1 cup of celery, 1/2 cup of onion, and 1/2 cup of bell pepper into small pieces. Add these to the bowl along with the cooled macaroni.
- Pour the dressing over the pasta and veggies, then gently fold until everything is evenly coated. If using chopped hard-boiled eggs or pickles, fold them in at the end.
- Cover the salad and refrigerate for at least a couple of hours to let the flavors meld.
- Taste before serving and adjust seasoning if necessary.
Notes
Allow the macaroni salad to chill to enhance flavors. Experiment with add-ins such as diced ham or cooked bacon. Use fresh vegetables for the best crunch.
