Preparation

- In a large skillet over medium heat, brown the ground beef with chopped onion, salt, and pepper until fully cooked and onions are translucent, about 6-8 minutes.

- In a bowl, whisk together the cream of mushroom soup with milk until smooth.
Assembly and Cooking
- In a greased 9x13 baking dish, layer half of the sliced potatoes, the beef mixture, half of the soup mixture, and half of the cheddar cheese.
- Repeat layers until dish is full, finishing with cheese on top.
- Cover with foil and bake for 45-50 minutes until potatoes are fork-tender.
- Uncover during the last 10 minutes to allow cheese to become golden and bubbly.
- Let the casserole rest for 10 minutes before serving.
