Ingredients
  

Dry Ingredients
  • 2 cups All-purpose flour Use a quality brand for best structure.
  • 3/4 cup Unsweetened cocoa powder Dutch-process cocoa gives a more intense chocolate flavor.
  • 1 cup Granulated sugar Adds sweetness and helps with browning.
  • 1 tablespoon Baking powder
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
Wet Ingredients
  • 2 large Large eggs Ensure they are at room temperature.
  • 1 cup Buttermilk Keeps the muffins moist.
  • 1/2 cup Greek yogurt
  • 1/4 cup Vegetable oil
  • 1/4 cup Unsalted butter Melted.
  • 1 teaspoon Vanilla extract
Chocolate Chips
  • 1 cup Semi-sweet chocolate chips Reserve a small handful for topping.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C) and line a muffin tin with paper liners, lightly spraying them with non-stick spray.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until evenly mixed.
  3. In another bowl, whisk the eggs, buttermilk, Greek yogurt, oil, butter, and vanilla until well combined.
  4. Fold the wet ingredients into the dry ingredients gently with a spatula until just combined, ensuring not to overmix.
  5. Gently fold in the chocolate chips, reserving a small handful for topping. Allow the batter to rest for 10 minutes.
Baking
  1. Fill each muffin cup nearly to the top and sprinkle the reserved chocolate chips on each muffin.
  2. Bake at 425°F for 5-7 minutes. Without opening the door, reduce the temperature to 350°F (175°C) and bake for an additional 12-16 minutes, until a toothpick inserted comes out with a few moist crumbs.
  3. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack. Enjoy warm!

Notes

For extra success, don’t overcrowd the muffin pan and let muffins cool slightly before removing from the pan. You can customize muffins by adding nuts or fruits.
