  • 1 cup pancake mix Quick binder
  • 1 large egg
  • 3/4 cup milk Use whole milk for richer batter
  • 1 tablespoon vegetable oil For the batter and frying
For frying
  • 12 pieces jumbo marshmallows Jumbo marshmallows puff best
  • 3 inches vegetable oil For frying
For serving
  • to taste whipped cream Optional, for extra indulgence
  • to taste chocolate syrup
  • to taste sprinkles

Method
 

Preparation
  1. Pour about 3 inches of vegetable oil into a deep pot and heat it to 350°F.
  2. In a medium bowl, whisk together pancake mix, egg, and milk. Add a small drizzle of vegetable oil and whisk until smooth.
Cooking
  1. Skewer or hold each jumbo marshmallow and dip it into the batter, ensuring it is coated completely.
  2. Carefully lower each marshmallow into the hot oil, working in small batches to maintain an even temperature.
  3. Fry for 30 seconds to 1 minute, turning occasionally until golden brown.
  4. Remove with a slotted spoon and drain on paper towels, letting cool for a few seconds.
Serving
  1. While warm, top with whipped cream, drizzle with chocolate syrup, and sprinkle with colorful sprinkles. Serve immediately.

Notes

Best eaten on the same day. Can be paired with other treats like pancakes or fruit, and served at parties. Store leftovers in an airtight container for up to 1 day.
