For the Topping
  • 100 grams Blueberry jam Adds a fruity topping.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Crush the digestive biscuits into fine crumbs and mix with melted butter.
  3. Press the mixture evenly into the bottom of a 9-inch springform pan to form the crust.
Baking the Crust
  1. Bake the crust for 15 minutes. Allow it to cool slightly.
  2. Increase oven temperature to 400°F (200°C).
Making the Filling
  1. In a large mixing bowl, beat softened cream cheese and sugar until smooth and fluffy.
  2. Add eggs, heavy whipping cream, flour, vanilla extract, and lemon zest. Mix until creamy and well combined.
Combine and Bake
  1. Pour the filling over the baked crust, spreading it evenly.
  2. Bake at 400°F (200°C) for 15 minutes.
Cooling
  1. Reduce oven temperature to 200°F (95°C) and bake for an additional hour.
  2. Turn off the oven and crack the door to cool gradually for another hour.
Chill and Garnish
  1. Spread blueberry jam evenly on top of the cheesecake.
  2. Chill in the refrigerator for several hours or overnight.
  3. Before serving, garnish with fresh blueberries.

Notes

For best results, bring ingredients to room temperature and use a water bath for extra creaminess.
