Preparation
- Pat the short ribs dry and season generously with salt and black pepper.
- Optional: Sear the short ribs in a hot skillet until browned on all sides.
- In the crockpot, layer the sliced onion and minced garlic, and place the short ribs on top.
- In a bowl, whisk together the beef broth, Worcestershire sauce, tomato paste, thyme, and pepper, and pour this mixture over the ribs.
Cooking
- Cover and cook on low for 8-9 hours or on high for about 5-6 hours until the ribs are tender.
- Remove the ribs once cooked. Mix cornstarch with cold water until smooth, then stir into the hot liquid and cook on high for 10-15 minutes until thickened.
- Return the short ribs to the crockpot, spoon the gravy over the top, and serve hot.
Notes
For a spicy version, add red pepper flakes or jalapeƱo. For a vegetarian option, consider jackfruit as a meat alternative. Enhance the gravy with fresh herbs like rosemary or sage.
