Preparation
- Preheat the oven to 400°F (200°C) or heat 1–2 inches of oil in a heavy pan until shimmering if frying.
- Brown the ground beef in a skillet over medium-high heat and sprinkle in cumin, chili powder, and garlic powder. Cook until no pink remains.
- Remove the pan from the heat and stir in the cheese until melted into a creamy mix.
- Warm the tortillas so they bend without cracking. Place a small spoonful of the beef-cheese mix near one edge of each tortilla.
- Roll tightly and place seam-side down. If baking, arrange on a sheet and brush each taquito with a little oil.
Cooking
- If baking, slide the sheet into the oven and bake for 15–20 minutes until golden. If frying, carefully lower them in hot oil and fry for 2–3 minutes per side until deep golden. Drain on paper towels.
Serving
- Serve hot with sour cream and salsa. Enjoy the crispy taquitos!
Notes
Time-saver: Brown the beef ahead and refrigerate; assemble just before cooking. Tortillas crack when cold; warm briefly in a damp towel or skillet. Simple variation: Add chopped cilantro and a squeeze of lime for brightness. Great serving ideas include a simple salad or a party platter!
