  • 4 oz fresh spinach Baby spinach wilts beautifully.
  • 1 cup cherry tomatoes Look for firm, bright ones for the best flavor.
  • 1/2 cup Parmesan cheese Freshly grated melts better into the sauce.

  • 1 tbsp olive oil For cooking the sausage.
  • 3 cloves minced garlic Adds aromatic flavor.
  • Salt & pepper to taste For seasoning.

  1. In a large skillet over medium heat, heat the olive oil and add the Italian sausage, cooking until browned, about 6-8 minutes.
  2. Add the minced garlic and stir for about 1 minute until fragrant.
  3. Stir in the cherry tomatoes and cook until softened, about 3-4 minutes.
  4. Toss in the fresh spinach and cook until wilted, about 2 minutes.
  5. Pour in the heavy cream and add the grated Parmesan cheese. Stir until smoothly combined and heated through, about 2-3 minutes.
  6. Season with salt, pepper, and red pepper flakes to taste.
  7. Remove from heat, garnish with fresh basil leaves, and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for 2 months. Reheat gently in a skillet to maintain the creamy texture. Don’t overload the skillet to ensure proper browning of the sausage.
