Method
Cooking the Pasta
- Boil 8 oz of bow tie pasta according to package instructions until al dente, then drain and set aside.
Sautéing the Vegetables
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add 2 cloves of minced garlic and 1 cup of sliced mushrooms, cooking until the mushrooms are tender, about 5 minutes.
- Stir in 2 cups of fresh spinach and cook until wilted, approximately 2 minutes.
Making the Sauce
- Pour in 1 cup of heavy cream and bring to a simmer.
- Stir in 1 cup of grated Parmesan cheese until melted and combined.
Combining and Serving
- Add the cooked pasta to the skillet and mix well, seasoning with salt and pepper to taste.
- Serve hot.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. For freezing, wrap tightly in plastic wrap, then foil, and freeze for up to 2 months. Reheat in skillet over low heat, adding a splash of cream to maintain texture.
