Ingredients
  

For the Pie Crust
  • 1 cup All-purpose flour Preferably King Arthur flour for quality.
  • 6 tablespoons Unsalted butter Cold and cubed for flaky crust.
  • 1 tablespoon Sugar For added sweetness.
  • 1 pinch Salt To enhance flavor.
  • 2-4 tablespoons Cold water Adjust as needed for dough consistency.
For the Butterscotch Filling
  • 3/4 cup Brown sugar For the filling.
  • 3 tablespoons All-purpose flour To thicken the filling.
  • 3 large Eggs Egg yolks only for the filling.
  • 2 cups Whole milk For a rich filling.
  • 3 tablespoons Unsalted butter Stirred in until smooth.
  • 1 teaspoon Vanilla extract For added flavor.
For the Meringue Topping
  • 3 large Egg whites To create meringue.
  • 1/4 teaspoon Cream of tartar Helps stabilize the meringue.
  • 1/2 cup Sugar For sweetness in the meringue.

Method
 

Preparation of Crust
  1. In a large bowl, combine the flour, salt, and sugar. Cut in the cold butter until crumbly.
  2. Gradually add cold water until the dough holds together. Shape into a ball, wrap in plastic, and refrigerate for 50 minutes.
Preparation of Filling
  1. Blend 1/2 cup of brown sugar with flour. Mix in egg yolks and milk until smooth.
  2. Dissolve the remaining brown sugar in a saucepan over moderate heat and whisk in the egg mixture. Cook until thickened.
  3. Once thickened, remove from heat and stir in butter and vanilla until smooth.
Assembling the Pie
  1. Preheat the oven to 425°F (220°C). Roll the refrigerated dough to about 1/3-inch thick and fit it into a pie plate.
  2. Line with parchment and add pie weights. Bake for 15-20 minutes.
  3. Reduce oven temperature to 350°F (175°C) and fill the crust with the butterscotch mixture. Bake for another 15-20 minutes. Allow to cool completely.
Meringue Preparation
  1. In a pot, heat water and place a glass bowl on top. Add egg whites, cream of tartar, and sugar, whisking until reaching 160°F (71°C).
  2. Whip until medium-stiff peaks form and spread over the cooled pie.
Final Touch
  1. Use a kitchen torch to lightly brown the meringue topping for a beautiful finish.

Notes

Avoid overworking the dough for a flaky crust. Cool the filling before adding to the crust.
