Method
Preparation of Crust
- In a large bowl, combine the flour, salt, and sugar. Cut in the cold butter until crumbly.
- Gradually add cold water until the dough holds together. Shape into a ball, wrap in plastic, and refrigerate for 50 minutes.
Preparation of Filling
- Blend 1/2 cup of brown sugar with flour. Mix in egg yolks and milk until smooth.
- Dissolve the remaining brown sugar in a saucepan over moderate heat and whisk in the egg mixture. Cook until thickened.
- Once thickened, remove from heat and stir in butter and vanilla until smooth.
Assembling the Pie
- Preheat the oven to 425°F (220°C). Roll the refrigerated dough to about 1/3-inch thick and fit it into a pie plate.
- Line with parchment and add pie weights. Bake for 15-20 minutes.
- Reduce oven temperature to 350°F (175°C) and fill the crust with the butterscotch mixture. Bake for another 15-20 minutes. Allow to cool completely.
Meringue Preparation
- In a pot, heat water and place a glass bowl on top. Add egg whites, cream of tartar, and sugar, whisking until reaching 160°F (71°C).
- Whip until medium-stiff peaks form and spread over the cooled pie.
Final Touch
- Use a kitchen torch to lightly brown the meringue topping for a beautiful finish.
Notes
Avoid overworking the dough for a flaky crust. Cool the filling before adding to the crust.
