Ingredients

Main ingredients
  • 1.5 lbs Large shrimp, cleaned and deveined Use fresh or thawed shrimp for the best texture.
  • 2 tablespoons Olive oil For sautéing shrimp.
  • 3 tablespoons Unsalted butter Essential for developing flavor.
  • 3 teaspoons Minced garlic Adjust to taste for more garlic flavor.
  • 0.5 cup White cooking wine A dry variety is preferred.
  • 1.5 cups Heavy whipping cream Avoid low-fat alternatives for best results.
  • 0.5 cup Grated Parmesan cheese Freshly grated for robust flavor.

Method

Preparation
  1. In a large skillet over medium-high heat, add the olive oil and heat until shimmering.
  2. Season the shrimp with salt and pepper, then add to the skillet. Sauté for 2-3 minutes per side until fully cooked and lightly seared. Remove them from the skillet and set aside.
  3. Reduce the heat to medium, then add the unsalted butter and minced garlic to the skillet. Cook until fragrant, about 1-2 minutes.
  4. Pour in the white cooking wine, scraping up any browned bits. Let it simmer until reduced by half.
  5. Slowly whisk in the heavy whipping cream, stirring continuously until the sauce thickens slightly, about 3-5 minutes.
  6. Stir in the grated Parmesan cheese until fully melted and creamy.
  7. Return the cooked shrimp to the skillet, tossing to coat, and heat through for an additional 1-2 minutes.

Notes

Don't overcrowd the pan to ensure shrimp sear properly. Bring shrimp to room temperature first for even cooking. Consider making extra sauce to pair with pasta or bread.
