Preparation
- Slice the chicken breasts in half horizontally to make cutlets and pat them dry. Season both sides with salt, black pepper, and Italian seasoning.
Cooking
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for about 4 to 5 minutes per side until golden and cooked through. Move the chicken to a plate.
- Lower the heat to medium and add minced garlic to the same skillet. Stir for about 30 seconds until fragrant, being careful not to let it brown.
- Pour in chicken broth and stir to scrape up the browned bits. Let it simmer for 1 to 2 minutes.
- Pour in heavy cream and bring to a gentle simmer. Gradually stir in freshly grated Parmesan cheese until melted and creamy.
- Return the chicken to the skillet, spooning the sauce over it. Simmer for another 2 to 3 minutes to let the flavors meld.
- Serve with a sprinkle of parsley and an optional squeeze of lemon juice.
